The Cher-et-Tendre’s specialty is to buy bananas, usually a dozen, then to eat 9 of them (10, the good weeks) and to pass by the remaining saying « wow, I really need to eat those». After a few days like that, the fruit will develop its own little ecosystem and it’s basically when it has enough legs to run off by itself that it will ends up in the trash can!
Well, since I hate throwing food away, I made up a little “empty fridge” recipe (because obviously the mutant banana situation is always happening when I decided because of my infinite laziness my principles not to set a foot outside the house), which is also vegan .
For the easy, healthy, without any animal product and without weird ingredients banana bread, follow me, c’est par ici:
In a medium bowl, mix:
- 1.5 cup flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- a pinch of salt
- a pinch of cinammon
Then, in a second medium bowl, mix again
- 3.5 very ripe bananas (cut lengthwise and keep the last half for later)
- A few drops of vanilla extract (or a bean)
- 1/3 cup brown sugar
- 1/3 cup olive or coconut oil
- 1/3 cup walnuts
- 1/3 cup of seeds (here sunflower and pumpkin)
Mix the content of both bowls and pour the mix into a cake pan covered in oil and flour. Add the remaining half banana and bake for something like 20 minutes in a 350°F preheated oven.
Decorate with a few seeds on the top and serve it lukewarm. You can keep in in a hermetic plastic box in the fridge for several days, but something tells me it is not going to last that long anyway!
(PS: if the fruit starts walking by itself in your kitchen, it’s not a big deal, you’ll just get more protein in the bread!)
