The weather is bad but you are still managing to follow your detox plans? Is it cold outside but you are able to say a big “no” to fatty comfort food? Good for you, well done! And since I am a really nice person (!) I am giving you my very own recipe of vegan chili. It’s healthy comfort food, spicy and contains a lot of great ingredients.
And if, like mine, your Cher-et-Tendre is a huge carnivorous (“me, eating tofu? Ahahaha! Keep dreaming!”), take a deep breath, and roll until the back of the page, you’ll find the magic formula (the chili con carne!) And just like that, for once, everyone will be eating something similar. Don’t thank me, it’s free and follow me:
Chili Vegan for 2-3 people (or 2-3 meals)
- 1 pack of tofu, cubed
- 1 can of corn*
- 1 can of red of black beans*
- 1 can of mushrooms*
- 1 can of peeled tomatoes
- 1 red bell pepper
- 1 little hot pepper (or a jalapeno)
- 1 big onion
- 2 gloves of garlic
- A seasoning mix for chili
- Salt, pepper, or whatever you love
- Some olive oil
*You can also use fresh ingredients, not canned. But in that case I was a little bit in a rush. Did you know that you must never keep a men waiting for food?
How to proceed:
In a pan, heat the olive oil and stir the chopped onions. Add the tofu if you like it crispy. Then add the rest of the ingredients except the tomatoes, and spice it up. Let’s cook it slowly for 20 minutes.
I usually serve my chili with some wild rice and a lot of homemade guacamole (will give you my recipe soon. The one without the yucky blend spice.) (Said the girl who just used it for the chili.) (But I’ve never said I was someone coherent!)
And for the “con carne” version, it’s the same thing, but instead of tofu I used beef. You can also add grated cheese and sour cream, Chipotle style.
